Our Story: Why We Exist

The Genesis: From Building Homes to Cultivating Life

Paradise Fields began not as a business idea, but from a deep personal conviction.

For decades, our founder, Mario Roque—a real estate developer and man of faith—built homes and communities across Ontario. But on a quiet Christmas in 2015, seated in a small church, he heard a message that shifted his course. It spoke of nutrient-dense food as part of God’s design for healing both body and soul.

That message led to a simple, searching question: What might be accomplished if we tried to recreate the Garden of Eden?

With no farming background and a great deal of faith, Mario stepped into unfamiliar soil. He set out to grow truly nourishing food and to help guide people toward healthier, more joyful lives. From that step of faith, Paradise Fields was born—rooted in restoration, stewardship, and hope.

We are not merely farmers; we are Restorers. At Paradise Fields, we believe that the health of the body cannot be separated from the health of the soil. Our mission is to restore food to wholeness by going "beyond organic.".We treat the farm not as a food factory, but as a pharmacy. By remineralizing our soil with glacial rock dust and sea minerals, we ensure that every apple, every green, and every vegetable is packed with the life-giving nutrients your body was designed to crave.

Mario’s journey began in real estate, where he spent decades building homes and communities across Ontario. Over time, a deeper calling took root—one centered on stewardship, generosity, and restoring what truly sustains life. That conviction led to the founding of Paradise Fields: a place where faith, land, and care come together to support healthier, more purposeful living.

Alain joined Paradise Fields in 2020, bringing experience in business management, health-focused food systems, and community-driven initiatives. Passionate about people and purpose, he works to align daily operations with a broader vision of restoration—building teams, systems, and culture that foster lasting transformation in the lives of individuals and the communities they serve.

Kapil’s roots in agriculture began in his childhood in India, where he was raised on a farm growing fruits, crops, and livestock. That early experience shaped both his practical knowledge and deep respect for the land. With formal training in agricultural science, Kapil tends the orchards with care and precision, helping ensure that what grows here is healthy, resilient, and deeply nourishing.

Keith oversees the growing of our salad mixes and edible flowers distributed across the Greater Toronto and Hamilton Area. A natural problem-solver with an intuitive feel for crops, he brings both precision and care to the field. For Keith, agriculture has been more than a profession—it has been a deeply healing and transformative journey. Working with the land restored his sense of purpose, and today he tends each crop with the same attentiveness that once helped restore his own life.

Sarah joined the Paradise Fields family from Belgium, bringing an international perspective on sustainable living and community agriculture. She is a driving force behind our Bounty Box (CSA) program, working to ensure that our members receive a personalized and delightful harvest experience. She is passionate about the details that turn a box of vegetables into a weekly gift of health

Kevin Patey

Kevin Patey

Farm Mechanic 

As the Farm Mechanic, Kevin uses his 15 years of mechanical background combined with electronic engineering and I.T. experience to operate, maintain, troubleshoot and fix just about anything that comes his way.

Kevin's passions include his family, and continuingly learning how to better himself.

Some say he seems to have a "Spidey Sense" when it comes to things breaking down around the farm. He seems to be in the right place, at the right time!

Garfield serves as the Store Manager at Paradise Fields, where he brings a warm, knowledgeable presence to our community. deeply invested in the art of communication and nutrition, Garfield is passionate about helping customers understand the "why" behind their health choices. He describes his favorite part of the work as "bridging the physical to the spiritual," helping guests see the connection between nutrient-dense food and a restored life. Whether he is discussing healthy fats or the farm's mission, Garfield is dedicated to ensuring every visitor feels seen and supported.

Daniela Idrovo is the culinary heart of Paradise Fields, where she transforms our "Eden Standard" produce into unforgettable dining experiences. With years of professional restaurant experience before joining the Paradise family, Daniela brings a refined skill set and a creative spirit to the farm's kitchen.

She is responsible for the farm's private catering and special events, where she is known for crafting plant-based meals that "wow" guests—proving that food can be both deeply healing and incredibly delicious.

Ravinder Singh is the Microgreens Manager at Paradise Fields. His journey with the farm began as a co-op student, and his passion for working with nature led him to continue on the team. With roots in a farming background, Ravinder has long been drawn to agriculture. He holds a Bachelor’s degree in Agriculture from India and furthered his studies in Sustainable Agriculture in Canada. Ravinder is known for his curiosity and hands-on approach. He is always eager to try new things and experiment in the field as a way to learn and improve.

Josiah plays a critical role in expanding the reach of the Paradise Fields mission. He manages the farm's wholesale operations and maintains vital relationships with our network of retail partners and stockists. Josiah is responsible for the logistics and data management that ensure our nutrient-dense produce—from our signature apples to our microgreens—makes it from our fields to grocery shelves across the region. He serves as a key link between the farm's harvest and the wider community.

James Niyomugabo serves as the Marketing Lead for Paradise Fields. He oversees all media, marketing, and social media initiatives, serving as the primary storyteller for our mission.James is responsible for bridging the gap between our fields and your home. Dr. Cho serves as the Clinic Director for Paradise Health and the Chair of John Burden College. He holds a Doctor of Naturopathy from the Canadian College of Naturopathic Medicine and a Masters of Fitness Science from York University. A Certified Exercise Physiologist, Dr. Cho specializes in treating chronic health conditions using lifestyle medicine.

Vesna Cestaric is a Registered Massage Therapist licensed with the College of Massage Therapists of Ontario (CMTO). She is known for her exceptional therapeutic approach, which emphasizes active movement therapy, joint mobilization, and remedial exercises. Vesna integrates local hydrotherapy, cupping, and dynamic taping into her treatments to address musculoskeletal issues at their root.

Dominique Raymond is a skilled Hydrotherapist and a graduate of the Lifestyle is Medicine Institute's inaugural Hydrotherapy Internship. Dominique specializes in administering constitutional hydrotherapy, peat baths, and other water-based treatments designed to boost immunity, reduce inflammation, and promote detoxification.

Mike and Rene Lemon serve as the stewards of relational and spiritual health within the Paradise ecosystem. As the leaders of the "Love is Medicine" program, they provide spiritual counseling and relationship coaching designed to heal the "Spirit" alongside the body.

They are integral members of the One Week in Paradise team, offering support that helps couples and individuals strengthen emotional bonds and find spiritual grounding. Mike and Rene believe that true health cannot exist without healthy relationships and a connection to the Divine. They create a safe, non-judgmental space for guests to explore the emotional and spiritual roots of their well-being
